Double Chocolate Peanut Butter Cereal Bars

Say hello to your latest obsession... these chocolatey peanut butter bars will please any picky eater!

  • 5-6 cups Chocolate Koala Crisp Cereal *see notes! //alt. use any brown rice cereal
  • 1/2 cup Date Syrup
  • 1/2 cup Peanut Butter Georgia Grinders is my fave (code: kellyk)
  • 1/4 cup Coconut Oil
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Salt

  1. Pour your cereal into a large bowl and set aside. Grease a 8x8 baking dish with coconut oil or cooking spray and set aside.

  2. In a small sauce pan over medium low heat, stir together the date syrup, peanut butter and coconut oil. Let it get to a slow bubble before removing it from the heat and adding the vanilla extract and salt. 

  3. Mix the cereal and the date mixture together before pouring the combined ingredients into your prepared baking dish. Pop it into the fridge while you are making the chocolate mixture.

  4. Place your chocolate in a medium microwave safe bowl and microwave for 1 minute. Stir and microwave again in 15 sec incremints until fully melted.

  5. Pour the melted chocolate and peanut butter over the bars before putting them back into the fridge to completely set. About two hours. Slice and keep them in an air tight container in the fridge until you're ready to eat them!

Recipe Notes

*start with 5 cups of cereal and add in the last cup if the mixture seems very wet.
