Apple Pie Pecan Bars

These bars are all about the classic flavors of apple pie enriched with toasted pecans and warm spices!

  • 2 tbsp Coconut Oil
  • 1/2 cup Pecan Butter * I used Georgia Grinders
  • 1/4 cup Maple Syrup
  • 1/4 cup Unsweetened Apple Sauce
  • 1 tsp Vanilla Extract
  • 1/2 cup Oat Flour *I made my own by blending 1/2 cup oats in my blender
  • 1/4 cup Gluten-Free Rolled Oats
  • 3 tbsp Coconut Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Pumpkin Spice
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1/2 cup Honeycrisp Apple peeled and finely diced
  • 1/4 cup Pecans chopped


  1. Preheat your oven to 350 degrees F. Grease a 9x5 loaf pan and set aside.

  2. In a large bowl, whisk together the wet ingredients (coconut oil-vanilla ext).

  3. Add the dry ingredients (except apples&pecans) to the wet and fold them in until just combined. 

  4. Spoon 3/4 of the batter into your loaf pan, add the apples and pecans then top with the rest of the dough. Press down firmly with either your hands or spatula so that the bars will stick together.

  5. Bake for 20-22 minutes. Let the bars cool completely in the pan before cutting them into 12 bars and enjoy!
