Vegan Caramel Pecan Blondies

These Vegan Blondies with Caramel and Pecans are quick, easy, and simple. Dairy-free and egg-free, they’re loaded with caramel pieces and pecans for an ooey-gooey dessert ready in just 25 minutes! Serve them on their own or with a scoop of ice cream.

  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup caramel pieces I used 12 cocomels sea salt caramels
  • 1/4 cup pecans chopped


  1. In a large bowl, mix together the ground flaxseed and 3 tbsp of water and let it sit for 5-10 to create a “flax egg”.
  2. Preheat your oven to 350 degrees F and grease a small baking dish (mine was 5x3) with coconut oil or line it with parchment paper. Set the baking dish aside while you finish making the batter.
  3. In the same bowl as your flax egg, add in the butter, sugar (**you can see 1/4 cup - it tastes great, but it won’t give you that classic gooey texture you’re looking for) and vanilla and whisk until light and fluffy - about 1 minutes using an electric mixer.
  4. Incorporate the flour, baking soda and salt into the wet ingredients.
  5. Press the batter into your prepared baking dish. To finish it off, top the batter with the caramel pieces and pecan pieces.
  6. Bake the blondies for about 25 minutes. It will seem a little underdone but it’s just the gooey caramels.
  7. Wait about 5 minutes before digging in!
