Peach Cobbler Crumble Bars

Made with simple ingredients, these vegan Peach Cobbler Crumble Bars are full of protein for the perfect healthy breakfast or easy snack that is kid-friendly and delicious. Make them ahead of time to enjoy all week!

  • 2 tbsp ground flaxseed
  • 5 tbsp water
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1/3 cup packed brown sugar coconut sugar or a sugar alternative works well too
  • 3/4 cup plant-based milk


  • 1 1/2 cup oat flour
  • 1 serving vanilla protein by nuzest
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 - 3/4 heaping cup of chopped nectarines or peaches pealed and diced


  • 1 tbsp coconut oil
  • 3 tbsp brown sugar
  • 2 tbsp oat flour
  • 2 tbsp oats
  • Powdered sugar *optional


  1. Preheat your oven to 350 degrees F. Grease a 6 molds of a mini loaf tin or a single regular sized loaf baking dish and set aside.

  2. In a large bowl, combine the ground flaxseed and water together and let it sit for about 10 minutes. 

  3. Add in the remaining wet ingredients (coconut oil-milk) and whisk until combined.

  4. In a small bowl, whisk together the dry ingredients (excluding the fruit!) before incorporating them into the wet.

  5. Fold in the chopped peaches, reserving few to place on top if wanted.

  6. Pour the mixture evenly into the prepared 6 molds or your single loaf tin. Top with the remaining peaches if using.

  7. In the same small bowl that you whisked your dry ingredients together, combine the crumble ingredients with a stirring utensil. 

  8. Sprinkle the crumble ingredients evenly over the cobbler batter.

  9. Place the loaves in your preheated oven and bake for about 22 minutes or until a toothpick can be inserted and come out clean.

  10. Let cool completely before sprinkling with optional powdered sugar.
