Total Time 15 minutes
Servings 8

  • 1/2 cup almond flour
  • 1 tbsp maple syrup
  • 1 tbsp oil melted coconut or avocado
  • 4 vegan caramels
  • 2 tbsp dairy-free chocolate

  1. Preheat your oven to 325 degrees F.
  2. Line a baking sheet with parchment paper and set aside.
  3. In a small bowl, mix together the almond flour, maple syrup, and oil.
  4. Using your hands, divide the batter into 8 equal parts, roll them into balls and place them on the parchment paper.
  5. Again, using your hands, flatten the cookie dough balls out until they are about 1 1/2-2 inches wide. You can ‘clean’ the outsides of the cookies up to make them look more uniform by running your fingers around the perimeter and lightly pushing the dough back together.
  6. Once flattened, bake for 6 minutes.
  7. While the cookies are baking, cut each caramel piece in half to make 8 pieces.
  8. Once the cookies have baked for 6 minutes, remove them from the oven and place a caramel half on each cookie.
  9. Place the cookies back in the oven for 4-6 minutes or until the cookies are starting to brown around the edges.
  10. While the cookies start to cool, melt your chocolate in the microwave in 30-second increments until melted, making sure to stir frequently.
  11. Once the cookies have cooled for a few minutes, dollop a little the melted chocolate on top of the melted caramel.
  12. Let them cool completely before enjoying! *You can speed up the cooling process by putting the cookies in the fridge for 30 minutes.
