Vegan, gluten-free, refined sugar-free, nut-free and minimal ingredients. These pancakes are incredibly allergy friendly and so eat to make!
In a small bowl, mix together your ground flax and water. Let it sit for 5-10 minutes to set up.
Add the rest of the ingredients and stir well. Let it sit while your skillet preheats over medium heat.
Once your skillet is hot, add a little bit of cooking spray or coconut oil to grease the skillet well before adding dollops of pancake batter. Let the pancakes cook for 1-2 minutes (or until they start to bubble a little) before flipping.
Continue to cook the pancakes until done (about 2 minutes on each side).
Top your pancakes with whatever you'd like and enjoy hot!
