These Pecan Pie Bars are not only tasty but they are perfect for novice bakers too!! Making a pie can seem daunting to even experienced bakers and these bars are the perfect solution. They require 7 simple ingredients that come together in minutes. The hardest part is waiting for these bars to cool before enjoying!
WHAT MAKES THESE PECAN PIE BARS VEGAN?
These bars swap the typical dairy-filled buttery shortbread crust for one that involves no dairy at all. You would never know, the crust is rich and the texture is perfectly sturdy while still having the flakey texture that shortbread is known for.
In addition, you’ll find no eggs in this recipe! Typical pecan pie requires eggs but we found a way around that by using sticky maple syrup and cornstarch for binding. You and your family/guests/friends will be amazed and think you slayed away in the kitchen for hours.
HOW DO YOU MAKE PECAN BARS?
These pecan pie bars require only one bowl and two steps. Talk about a no-brainer!
First, you’ll start by making the vegan shortbread crust. To do so, you will stir together the vegan butter, maple syrup, flour and salt.
After the crust is combined, you’ll press the crust into your parchment lined 9×5 loaf pan (feel free to double this recipe and make it in an 9×9 dish).
Next, using the same bowl as the crust, you’ll stir together the ingredients for the pecan topping. Once combined, you’ll pour the pecan topping onto the shortbread crust and bake the bars for 30 minutes.
Lastly, you’ll let the bars cool completely before slicing into squares and enjoying!
CAN YOU MAKE PECAN PIE BARS IN ADVANCE?
Yes! In fact, I would recommend you do so. These bars are even better the next day. Pecan pie (bars) for breakfast anyone? YES PLEASE. If you’re making them a day or two in advance, simply leave the bars on your counter in an airtight container. If you want to make them a few days in advance, you’ll want to leave them out on your counter for about 30 minutes before enjoying.
HOW DO YOU STORE THESE PIE BARS?
These bars are super simple and no fuss! Store them in an airtight container on your counter for up to 3 days or place the airtight container in your refrigerator for up to a week. After storing them in your fridge, follow the directions above when you’re ready to eat them!

Vegan Pecan Pie Bars
Ingredients
Crust:
- 1/4 cup melted butter
- 1/4 cup maple syrup
- 1 cup gf or reg all-purpose flour
- 1/8 tsp salt
Pecan Topping:
- 1/4 cup melted butter
- 1/4 cup maple syrup
- 1/2 tsp almond extract
- 1/8 tsp salt
- 1 1/2 tsp cornstarch
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350 degrees F and line a bread pan with parchment paper (don’t skip!).
- In a medium bowl, stir together the crust ingredients before pressing the mixture into the bottom of your prepared pan.
- Next, using the same bowl, you’ll stir together the melted butter, the pecan topping ingredients. Make sure to mix well.
- Pour the pecan topping over the crust and place the dessert in your oven to bake.
- Bake for approximately 30 minutes – the dessert will be done when then center looks gooey but the outside crust is starting to harden.
- Let the pecan bars cool for at least 15 minutes before using the parchment paper to remove the bars from the bread pan. Slice into 6-8 bars and enjoy!
