Long gone are the days of disappointing oatmeal cookies!
This recipe takes dry, boring, and bland oatmeal cookies to the next level with a delicious sugary glaze. You won’t be eating these right out of the oven, but they’re totally worth the wait.

To start, whisk the coconut sugar, vanilla, and vegan butter together. Then, fold in the rest of the cookie ingredients, and let the dough chill four about 30ish minutes.
After the dough has chilled, use an ice cream scoop to form 10-12 cookie balls, and place them on a parchment lined backing sheet. Let the cookies bake for 14-16 minutes. Immediately after removing them from the oven, use a spatula to flatten them and let cool.
Meanwhile, whisk together the glaze. Once completely cooled, drizzle, dip, or dunk to achieve your perfect cookie to glaze ration, and enjoy!

Vegan Iced Oatmeal Cookies
Sweet and satisfying these Vegan Iced Oatmeal Cookies are a fun twist on a classic favorite!
Ingredients
- 1/2 cup Oats
- 1 1/2 cups All-Purpose Flour
- 1 tsp Cornstarch
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- 8 tbsp Vegan Butter
- 3/4 cup Coconut Sugar
- 1 tsp Vanilla
Glaze:
- 1/2 cup Powdered Sugar
- 1 tbsp Soy Milk
Instructions

Start by whisking the coconut sugar, vanilla and vegan butter together until light and fluffy.

Next, fold in the rest of the cookie ingredients. Place the cookie dough in the fridge for about 30 minutes to chill and preheat your oven to 350 degree F.

While waiting, line a baking sheet with parchment paper and set aside.

Once the dough has been chilled, use a 1 inch ice cream scoop to form 10-12 cookie balls and place them on the parchment lined baking sheet.

Bake for about 14-16 minutes or until done but still soft.

Right when the cookies come out, use a glass or a spatula to flatten the cookies.

Let them cool completely before dipping them in the glaze!
