How to Make These Irresistible Cookies:

  1. Mix Dry Magic:
    • In a bowl, combine oats, flour, cornstarch baking soda, cinnamon, nutmeg and salt. It’s the foundation of your cookie goodness.
  2. Wet Wonders:
    • In the bowl of an electric mixture, add in the butter and sugar and whisk until fluffy. Add in the vanilla and whisk once more. This is where the magic happens.
  3. Bring It Together:
    • Gradually add the dry mix into the wet mix. Stir it up until everything is nicely combined. If you’re feeling fancy, and/or if your dough is very crumbly, add in the addition 1-2 tablespoons of plant-based milk.
  4. Scoop, Drop and Chill:
    • Use a spoon to drop rounds of dough onto a parchment lined baking sheet. Place the baking sheet in your fridge, covered with a kitchen towel, for at least 30 minutes.
  5. Preheat and Prep:
    • Preheat your oven to 350°F (175°C).
  6. Bake and Wait:
    • Once the dough has chilled, place the baking sheet it in the oven for 12-14 minutes, or until the edges are golden brown.
  7. Icing on Top:
    • While the cookies cool, whisk together powdered sugar and plant-based milk to create the icing. Once completely cooled, lightly kiss the cookies to the glaze and place them on a plate to let the glaze set.
  8. Indulge:
    • Let the cookies set completely before diving into the indulgence. Pro tip: these cookies taste even better the next day, so exercise some sweet patience.
