I have a confession…

These cookies are not at all what I was intending.

I was trying to make a copy cat recipe of my favorite breakfast cookie from this little cafe about 45 minutes away but it didn’t turn out as planned. THEY TURNED OUT BETTER!

Can you tell I’m pleased with these cookies? I so am! Here’s why:

  • Macro nutrition is completely covered as they are high in protein, healthy fats, and slow + fast digesting carbohydrates. Oh hey fiber, I see you!
  • Micro nutrition gets to toot it’s own horn too! Being as they are filled antioxidants, magnesium, zinc, anti-inflammatory herbs such as turmeric, cinnamon and boswellia (just to name a few) these cookies will support you in feeling your best.
  • They are dairy-free, gluten-free and realistically, pretty dang low in sugar. Each cookie equates to eating 1/4 of a small banana. That’s all the sugar there is folks! Since we are combining healthy fats and protein with the carbohydrates, there won’t be a nasty sugar crash after…. not like you’d have one anyway since the sugar is so low.

Essentially what I’m trying to say is that if you need a quick fuel boost before you hit the gym, running out the door to work or just simply need a snack while you’re making dinner…. you really should just eat a dang cookie!

*If you want to make these cookies even higher in protein, I’d recommend adding a scoop of Further Foods Collagen Peptides. Obviously they would no longer be vegan but if that doesn’t matter to you, DO IT!

  • 2 cup Gluten-Free Oatmeal
  • 2 small Bananas very ripe, mashed
  • 1/3 cup Pumpkin Seeds
  • 1/4 cup Coconut shredded
  • 1 scoop Further Food Tumeric Tonic
  • 2 tbsp Flaxseed Meel
  • 3 tbsp Coconut Oil melted and cooled
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt


  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

  2. In a standing mixer, whisk together all the ingredients. (This recipe is VERY forgiving but it needs to be well combined!)

  3. Once combined, divided the dough into eight balls and place them on the parchment paper. Flatten them slightly with your hands before baking them for 12-14 minutes.

  4. Cool on a cooking rack and enjoy!
