These Raspberry Crumble Bars are made with simple steps and ready in just 30 minutes. They’re the perfect crowd-pleasing dessert that is kid-friendly, Vegan, and made with good-for-you ingredients! 

Soccer moms rejoice, and throw those dry, packaged, and overpriced store bought bars in the trash where they belong. Okay, I’m kidding, sort of. Don’t get me wrong, I love a good store bought bar every once in a while. I mean, they’re convenient as heck and honestly pretty tasty, but these Raspberry Crumble Bars? They’re something special. I promise you, they’ll have you and your littles’ tastebuds singing your praises! 

Whether you’re making these easy crumble bars for an afternoon snack, healthy dessert, or gameday pitch-in, you will be winning all the cool mom points with these beauties. Or, maybe you’re not a mom and just want a tasty snack that won’t make you feel like garbage after (we all know that’s no fun). Regardless of the reasons behind your snacking needs, these raspberry crumble bars will fit the bill.

Luckily, these raspberry bars do not disappoint. They’re incredibly soft, buttery, and extra flaky for basically the most drool worthy dessert ever. Plus, all you’ll need to do is gather a few really simple ingredients and get your booty in the kitchen. Easier said than done, I know, but it’ll be worth it. I promise.

Ingredients for Fresh Raspberry Crumble Bars

For this recipe, you’ve got a couple options. We love variety after all! If you want to keep this recipe truly fresh and full of healthy fats and fiber, opt for the original version that uses my super easy homemade jam recipe. Just swap out the blueberries for raspberries. Or, if you’re in a pinch for time, feel free to just pick up your favorite jam from the store. Either way works, but be warned that most pre-made jam recipes are full of added ingredients, high in sugar, and may or may not be totally vegan. You do you, though! After you’ve made these important jam decisions, you’ll also need to gather the following ingredients. 

  • Oats – Oats are the secret to success with this Raspberry Oat Bar recipe! Any kind you have on hand will work, but I recommend quick cooking for an incredible fluffy texture. Take a look at the differences here.
  • Oat Flour – Oat flour can be found in most grocery stores, but you can easily make your own by tossing whole oats in a food processor and blending until they are ground into a powder-like texture.
  • Protein Powder – I used Just Natural protein from Nuzest (use code: thekellykathleen to save some money), but feel free to use any you have on hand! However, I recommend keeping a neutral flavor to truly let the raspberry flavor shine through.
  • Coconut Sugar – Any sugar or sweetener you have on hand will work, but I don’t recommend using a liquid version as it won’t spread evenly and can cause the ingredients to clump.
  • Baking Powder
  • Cinnamon – If you want to play with flavors, try adding allspice or nutmeg as well for a more pie-like taste.
  • Cashew Butter – I used Georgia Grinder’s cashew butter (code: kellyk), but you can use any nut or seed butter you prefer.
  • Butter – To keep things inclusive, I opted for a Vegan butter, but regular dairy-filled butter is just as good, too.
  • Jam – If you opt for a store bought version, I highly suggest finding a thick, all natural version to replicate the homemade option.  

Extra Toppings & Add-Ins

Of course, these bars are perfect all on their own, but if you want to add even more deliciousness try including a few extras such as chopped nuts, fresh whole berries, or even chocolate chips! You could even switch up the flavor altogether by using a different jam with any fruit you prefer. My favorite alternatives include blueberries, strawberries, and lemon. Then, if you want to get really fancy, you could even create a glaze to add on top using protein powder or icing. 

How to Make Raspberry Crumble Bars

The best thing about crumbles of all kinds is how easy they are to make, and these bars are no exception. If you want to make your own jam, be sure to check out this recipe first. 

Then, preheat your oven to 350 degrees Fahrenheit, and line a loaf pan with parchment paper. 

In your food processor, pulse all the ingredients together excluding the butter. Once the mixture forms coarse crumbles, pulse the butter in a few times until mixed. 

Next, pour about ⅔ of the mixture into the loaf pan, and press down firmly. Spread the jam out evenly over the mixture, and top it with the remaining crumble

To finish, place the pan in the oven to bake for 30 minutes, and let it cool completely before slicing it into bars. 

Do You Need to Refrigerate Raspberry Crumble Bars?

These bars can be kept on the counter for 3-4 days. However, for the best results, I recommend storing your gluten-free Raspberry Crumble Bars in an airtight container for up to a week. 

Can I Freeze Homemade Raspberry Crumble Bars? 

Yes! To prevent them from sticking together, wrap each bar separately. Or, place wax paper between each piece, and keep your bars in the freezer in a Ziploc bag for up to 2 months. 

Serving Suggestions

These bars can be eaten hot or cold. My favorite way to eat them is warmed up with a big scoop of vanilla ice cream!

  • 1/2 cup old fashioned oats
  • 1 cup oat flour
  • 1/4 cup Just Natural protein by Nuzest
  • 1/2 cup coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 cup cashew butter such as Georgia Grinders
  • 1/4 cup vegan butter cubed
  • Raspberry chia seed jam recipe


  1. Make recipe for chia seed jam if necessary. You can also use a store bought jam! You’ll need about 1 cup.

  2. Preheat your oven to 350 degrees F. Line a loaf pan with parchment paper and set aside.
  3. In your food processor, pulse all the ingredients together except for the butter. Once the mixture is in course crumbs, pulse the butter in a few times.
  4. Pour only 2/3 of the mixture into your prepared loaf pan and press down firmly.
  5. Spread your jam out evenly over the pressed mixture then top the jam with the rest of the crumble.
  6. Bake for 30 minutes.
  7. Let cool completely before cutting into 6-8 bars. Keep stored in an airtight container for up to a week.
