Soccer moms rejoice! You’ll be winning all the cool mom points with these beauties. No hate on store bought bars, they’re convenient as heck but these guys are special. They will have yours and your little’s tastebuds singing your praises!

Or maybe you’re not a mom and you just want a tasty snack that won’t make you feeling like garbage after (because, you know, that’s not fun!), these raspberry crumble bars fit the bill. All you’ll need is some really simple ingredients including raspberry jam. I left a recipe for you but if you’d prefer to make your life super easy (the jam recipe is pretty dang easy) – feel free to buy some jam that’s already pre-made.

Raspberry Crumble Bars

These vegan and gluten free bars will rock your tastebuds. They are made using homemade jam but store bought will work just fine!

Ingredients

  • 1/2 cup old fashioned oats
  • 1 cup oat flour
  • 1/4 cup Just Natural protein by Nuzest
  • 1/2 cup coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 cup cashew butter such as Georgia Grinders
  • 1/4 cup vegan butter cubed
  • Raspberry chia seed jam recipe

Instructions

  1. Make recipe for chia seed jam if necessary. You can also use a store bought jam! You’ll need about 1 cup.

  2. Preheat your oven to 350 degrees F. Line a loaf pan with parchment paper and set aside.
  3. In your food processor, pulse all the ingredients together except for the butter. Once the mixture is in course crumbs, pulse the butter in a few times.
  4. Pour only 2/3 of the mixture into your prepared loaf pan and press down firmly.
  5. Spread your jam out evenly over the pressed mixture then top the jam with the rest of the crumble.
  6. Bake for 30 minutes.
  7. Let cool completely before cutting into 6-8 bars. Keep stored in an airtight container for up to a week.
