Pumpkin Spice White Chocolate Chip Blondies
Ingredients
- 1/2 cup vegan butter melted
- 1 cup granulated sugar coconut sugar or dark brown sugar
- 1/2 cup pumpkin puree

- 3/4 – 1 cup vegan white chocolate chips
Instructions
- Preheat the oven to 350°F and line an 8×8″ baking pan with parchment paper.
- In a medium bowl, whisk together the melted vegan butter and sugar.
- Add in the pumpkin puree and vanilla extract, and whisk together thoroughly.
- Next, add in the salt, flour, pumpkin spice seasoning, baking soda, baking powder. Use a wooden spoon to evenly combine the ingredients.
- Using your wooden spoon, fold in the vegan white chocolate chips.
- Press the batter into your prepared baking dish.
- Bake the blondies in the oven for 33-35 minutes, or until the top is golden.
- Remove from the oven and allow the blondies to cool in the pan for 10 minutes before slicing. Slice and serve. Enjoy!
