Even greater than the cold vs. hot coffee debate, is the cold vs hot oatmeal debate. Okay, maybe not, but it’s still an important conversation to have!

I feel like overnight oats don’t get the credit they deserve. Don’t get me wrong, I love a big ole bowl of steaming hot oatmeal. However, I don’t love sweating while I eat breakfast.

Pumpkin Spice Overnight Oats

When the weather just won’t cooperate with my need for it to be colder and cozy at all time, overnight oats are the perfect way to cure my cravings! Featuring all things fall, these Pumpkin Spice Overnight Oats are made the night before and best served cold for a delicious, comforting, and most importantly cold breakfast when the weather just says na.

All you have to do is combine the ingredients, shake well, and store them in an airtight container overnight. WAM. BAM. DONE. Now, you can get back to better things like organizing your leggings or picking out pumpkins. Priorities, ya know.

Oh, before I forget! To up the nutritional value of this recipe, I used my favorite Smooth Vanilla protein powder from Nuzest USA. Pumpkin Spice Overnight Oats

These high protein, low sugar Pumpkin Spice Overnight Oats are the perfect healthy meal prep for fall!

Ingredients
  

  • 3/4 cup oat milk
  • 1/2 cup oats
  • 2 tbsp pumpkin purée
  • 1 tbsp flaxseed
  • 1/2 serving Nuzest USA Smooth Vanilla code: thekellykathleen
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg *optional
  • 1/8 tsp salt

Instructions
 

  • Put all the ingredients into a sealable container such as a mason jar.
  • Shake or stir and place the sealed container in the fridge overnight.
  • Serve with maple syrup, a splash of milk, and a spoonful of Georgia Grinders cashew butter (code: kellyk)
