It pains me to admit that this was my husband’s idea. No exaggerating, it little hurts.
He’s the one in our relationship that is always offering ideas but they are usually the WORST ideas in the history of life…. seriously. When building my desk (have you seen it yet? I’ll link the post here!), he suggested that I glue felt all over it… FELT?!? He might as well have suggested gluing shag carpet from the ’70s. The look I gave him made his eyes bug out and he quickly tried to remove that suggestion from the universe.
TOO LATE BAT WINGS! (That’s what I lovingly call him because his back hair looks ridiculous… he’s going to kill me for telling you, whoops!) THAT CRAP IS ALREADY OUT THERE TO BE REMEMBERED BY ALL! and by all I simply mean me… and now you!
So anyway, this recipe was completely his idea and now you can see why it pains me. I’m the one that’s suppose to have the good ideas! Not him.
Regardless, it will knock your socks off. Or your britches off. It’s gluten-free, vegan and has only a handful of ingredients. It can also be baked in muffin form which is equally as delicious.
I swirled the dough with peanut butter and topped it with some of Justin’s peanut butter cups to make it extra delicious… I can at least take credit for that mmk?

Peanut Butter Cup Banana Bread Bars
The easiest gooey chocolate and peanut butter banana bread you’ll ever make!
- 3 medium Bananas mashed *about 275g
- 1 tbsp Ground Flax
- 1 cup Peanut Butter + extra for topping //alt use any nut or seed butter
- 2-4 tbsp Coconut Sugar
- 3 tbsp Coconut Oil melted and cooled
- 1 1/2 tsp Vanilla Extract
- 1 1/2 cup Almond Flour
- 2 tbsp Coconut Flour
- 1/2 tsp Salt
- 1 tsp Baking Soda
- 4-6 mini Dairy-Free Peanut Butter Cups chopped
Preheat your oven to 350 degrees F. Grease or line an 8×8 pan with parchment paper and set aside.
In your electric mixture, stir together all of the ingredients except for the extra pb and the peanut butter cups until just combined. Be careful not to over mix.
Pour the batter into your prepared baking dish. Top the batter with spoonfuls of peanut butter and the chopped up peanut butter cups.
Bake for 20-25 minutes. You’ll want a toothpick to come out clean!
Let it cool completely before removing it from the pan.
