Not Another Scone Recipe
I know what ya’ll are thinking…another scone recipe?! Yep! Sorry, not sorry. They’re just the best, okay? I can’t get enough, and I’m not mad about it, especially when they turn out as amazing as this Peaches n’ Cream Scones recipe. Light, buttery, and with a refreshing peach flavor, they’re everything you never knew you needed. Trust me when I say you’re gonna want to make more than just one batch. I’ve made quite a few scones in my day, and they’re all delicious. However, I’ll always have a sweet spot for the ones made with fruit such as Strawberries n Cream Scones, my Lemon Poppyseed Scones, and these Blueberry Almond Scones.
This recipe might be my favorite yet, though. I mean, not only is it high protein, gluten-free, vegan, and all the other good things you could think of, it’s also made with fresh summer peaches. You know, the big, plump, juicy ones? Yeah, THOSE. They take these simple scones to the next level with a super sweet flavor perfect for the last of the summer weather. I’ve been eating them nonstop. Always with coffee, of course. In my opinion, they’re the best way to start the day, but my littles love them as an afternoon snack. In all honesty, there’s never a bad time to eat them.
So, are you ready to get in the kitchen? I thought so!
Ingredients for the Scones of Your Dreams
Sweeter than most other scones you’ve had in the past, this recipe is also full of protein to help cure your cravings without giving you an awful sugar crash later. Plus, all of the ingredients are super simple so you can whip these up any time you like without needing to run to the grocery store for a million strange ingredients you’re never going to use again. All you’re going to need are the following ingredients!
Flour – I used oat flour, but any flour you have on hand should work! Just keep in mind that the texture of your scones will change based on what kind of flour you use.
*Note: If you don’t have oat flour on hand, you can easily make it by placing whole oats in a food processor or high-power blender and blending them until smooth.
Protein Powder – As always, I used Nuzest protein powder. If you want to as well, feel free to use code: thekellykathleen to save a few bucks! If not, any protein you prefer will work with this recipe. However, I recommend sticking with a neutral flavor such as vanilla.
Sugar – I prefer coconut sugar, but you could use regular granulated sugar if you have it on hand.
Peaches – For the sweetest scones and best texture, I highly recommend opting for fresh peaches if you have them. If you do use the canned variety, be sure to drain any extra juices before adding them to your dough.
Milk – To keep this recipe vegan-friendly, I opted for plant-based milk, but regular dairy milk works as well.
Almond Extract – One of my favorite secret weapons, almond extract adds an incredible depth to this recipe and helps balance out the sweetness of the fresh fruit and sugar.
Butter – Again, to keep this recipe vegan, I used dairy-free butter. However, any butter you like best works just fine.
White Chocolate – Technically, the white chocolate is optional, but it’s the key ingredient to create the cream flavor for this peaches and cream scones recipe. Plus, who doesn’t love a little chocolate? I used vegan white chocolate chips but included whichever brand is your favorite.
How to Make Vegan Scones
Like my other recipes, these scones are so easy to create it’s almost laughable. Ready in about 30 minutes, you’ll be in and out of the kitchen in no time! Just follow the steps below.
Mix. In a large bowl, mix together all of the ingredients except for the butter and white chocolate chips.
Cut. Once the ingredients are combined, cut the butter with a fork until it resembles coarse chunks slightly bigger than peas. The peaches should also break down during this process. If not, be sure to break them down into tiny pieces with your fork.
Form the dough. Add in the chocolate chips, making sure to spread them equally throughout the dough. Then, work the dough into a ball using your hands.
Refrigerate. Place the dough in the fridge, and preheat the oven to 400 degrees Fahrenheit.
Create Scones. Once the oven has heated, place the chilled dough on a baking sheet, and pat it into a circle that is 1 ½ inches thick. Then, cut the circle into 6 mini triangles.
Bake. Place the baking sheet in the oven, and bake your scones for 12-14 minutes.
Cool. Let them cool completely (This will take 10 minutes or so.), and enjoy with a cup of coffee or your favorite tea!
Pro-Tip: If you want to get crazy, make a quick “icing’ by adding water to the protein powder until a glaze is formed, and drizzle it over the scones to dry.
The secret to super flaky scones is to use cold butter. Make sure it does not sit out before use!
Work quickly! You don’t want to overmix your dough or have it be too warm. If it becomes too sticky while you’re forming the scones, just pop it in the fridge for a minute to cool down.
Don’t panic if your dough is a loose mess at first. It forms quickly once you begin working it with your hands!
For the best results, store your scones in an airtight container in the refrigerator for up to a week. Or, pop them in a sealable bag, and place them in the freezer for up to 3 months.
While I would like to say this is my last scones recipe for a while, I definitely can’t make that promise. So, hopefully, you guys are as obsessed with them as I am! What is your favorite flavor combination when it comes to scones? Let me know in the comments below!
