In this post, I’m bringing you not one but two childhood classics wrapped up in an irresistible, single-serving recipe with PB&J Pop-Tarts!

In all honesty, I never had pop-tarts growing up. I have since been introduced, and I totally get the obsession. They’re freaking delicious! Plus, they’re so easy to snack on on-the-go (a lifesaver if you’re a busy mom like me).

However, I don’t love the long list of processed ingredients and high sugar content that comes with them. I knew I could do better, and – not to sound cocky – I did! This recipe is packed full of ooey, gooey filling with a flaky crust you actually won’t want to break the corners off of!

Plus, unlike the packaged varieties, these PB&J Pop-Tarts are made with vanilla protein powder, avocado oil, lower sugar raspberry chia jam, and peanut butter for a healthy, well-rounded breakfast, snack, or dessert that will keep you and your kiddos satisfied throughout the day.

To get started, preheat your oven and line a baking sheet. Then, mix your dough ingredietns, and roll it out into a rectangle. Next, spoon your jam onto half of the rectangle, and flip the bare side on top to form your pop-tart.

Crimp the edges using a fork, and bake for 18-22 minutes. Once cooked, let your pop-tart cool completely and top with glaze.

PB&J Pop Tart

A healthier version of two childhood favorites, these gluten-free PB&J Pop-Tarts will be your new breakfast staple!

Ingredients

Dough/Filling

  • 4 tbsp cup all-purpose flour use gluten-free equivalent for gluten-free
  • 1 tbsp of smooth vanilla protein by Nuzest USA code: thekellykathleen
  • 1 tbsp avocado oil
  • 1 tbsp water
  • 1 1/2 tbsp jam of choice I used my raspberry chia seed jam

PB Frosting

  • 1 tbsp organic peanut butter such as Georgia grinders
  • 1 tbsp vegan butter melted
  • 1-2 tbsp powdered sugar I used Lakanto

Instructions

  1. Preheat oven to 350 and line a baking sheet with parchment paper.
  2. Mix the dough ingredients together before rolling the dough out on the parchment paper until a rectangle forms. Mine was about 4 X 8 inches.
  3. Spoon your jam of choice on one half of your rectangle making sure to leave a small rim around the edges.
  4. Flip the bare side of your rectangle onto the jam side to form your pop tart.
  5. Crimp the edges by using a fork.
  6. Bake for 18-22 minutes.
  7. Let cool completely before topping with the glaze. Or don’t wait. I never have been able to.

    I’ve been celiac since I was a little girl and never had pop tarts. I’ve been wanting to try one for a while now but couldn’t find gf ones, and was afraid that recipes would fail me. This one looked so simple, so I whipped it up the moment I saw it. Twenty minutes of baking later, I had a delicious pop tart on hand! Thank you so much! I used gf ap flour and melted Miyoko’s butter instead of avocado oil. I made it with cherry jam and topped with almond butter. So so good. I’m very excited to try different flavor combinations. Thank you for this easy and delicious recipe!
