There comes a time in ones life when they create something so delicious that they think it really can’t be topped….
For me, the time is NOW!
That’s right babes, I’ve created something out of pure stress that became a thing of such beauty.
I use to stress bake only so that I could stress eat. (read: INHALE) If you are still in that spot, please know that’s OKAY! It’s more than okay. There is absolutely nothing wrong with you, there is absolutely nothing that needs to be fixed. There will be a time in your life when stress eating will no longer be the norm and you will bake beautiful treats only because it’s the best form of therapy!
I promise you’ll get there.

This recipe can have SO MANY adaptions:
Egg Free- Swap the eggs for chia eggs
Vegan- Swap the eggs for chai eggs, honey for maple syrup or granulated sugar (I’d do 1/4 cup sugar + 1/4 dairy-free milk!)
Up the sweetness: this bread isn’t overly sweet. Swap the applesauce for another banana if you want it sweeter!
Less sweet: 1) you cray 2) swap the bananas for sweet potatoes
Higher in healthy fats: replace the applesauce with more coconut oil
Lower in protein: again 1) you cray 2) replace the added Nuzest protein for more buckwheat flour. I wouldn’t if I were you though- Nuzest has the cleanest vegan protein powder that actually tastes GOOD. If you’ve tried dairy-free proteins, you know that’s something pretty spectacular. Add fruit or nuts: strawberries, peaches, blueberries… oh, the options are endless! Pecans, walnuts or almonds would be freaking delicious!

Honey Buckwheat Banana Bread
A healthy gluten-free classic banana bread recipe!
- 3 small Spotty Bananas
- 1/4 cup Unsweetened Apple Sauce
- 1/4 cup Softened Coconut Oil
- 1/4 cup Honey
- 1 tsp Vanilla Extract
- 1 1/2 cups Buckwheat Flour
- 1 serving Nuzest Just Natural protein powder code; ahealthyharmony
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 tsp Salt
Preheat your oven to 325 degrees F. Spray a 9×5 loaf pan with baking spray and set aside.
In a large mixing bowl, whisk the bananas until nearly completely mashed.
Add in the applesauce, coconut oil, honey and vanilla. Whisk until combined.
Add in the rest of the ingredients and fold them in until just combined. Make sure not to over mix!
Pour the batter into your prepared 9×5 loaf pan and bake for 55 minutes or until a toothpick can be inserted and comes out clean!
Let the bread cool for an hour in the loaf pan before slicing!
Store in an airtight container for unto 3 days on your counter or 7 days in your refrigerator). This break also stores really well frozen. Just slice it up before freezing!
