I’m writing this post a good month after I originally created the recipe and left it on Instagram ( if you aren’t following me @thekellykathleen, what are you even doing with your life??) for everyone to drool over.
Pretty sure I’m the one that’s now drooling.
I kind of forget about these little golden bars of bliss which is probably why it’s taken me so long to write a blog post about them. OH, that and the fact that the bish known as COVID-19 is totally ruining my day job hours… she’s rude.
Regardless, it’s now time for these little beauties to shine!
I tried to make the ingredients as basic as possible *READ: DELICIOUS AF BUT EASY* and I think I came up with a pretty dang good recipe.
Here are the things you’ll need:
one egg or a flax egg
a single spotty banana
vanilla extract for flavor but you can leave it out if necessary
unsweetened apple sauce or cashew butter – the apple sauce will make a more cake like consistency while the cashew butter will make the texture more gooey and delicious. I used applesauce the first time around and liked it but cashew butter is the way to go IMO!
almond flour – flour is a hot commodity right now but I’ve had no issue getting almond flour! People clearly don’t understand it’s baking GOLD
Nuzest protein– Just Natural, Vanilla or Probiotic Vanilla would work best!! baking soda + salt – two things everyone should always have on hand. Life without salt is a sad life but it also as so many uses!! You can clean things with it, defrost stuff, make salt dough, etc and don’t even get me started on baking soda. It’s the real MVP in life!! I’ve been using it to de-odor my carpet since the beginning of time.
lastly, a high quality chocolate. My favorite is Hu Kitchen chocolate. I love their bars something fierce but their chocolate gems would work wonderfully in this recipe as well!

Gooey Chocolate Blondies
gluten + dairy free blondies that are guaranteed to make you SWOON
- 1 whole egg
- 1 banana medium sized and spotty
- 1 tsp vanilla extract
- 1/4 cup unsweetened applesauce or cashew butter cashew butter will make it more fudgy
- 2 cups almond flour
- 1 serving @nuzest Just Natural "thanks for your support" link above!
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 – 1 Hu Kitchen Salty Dark Chocolate bar chopped * alternatively use 1/2 cup of chocolate chips
Mix everything together and bake in an 8×8 baking dish for 25ish minutes at 350 degrees F.
