The Best of Both Worlds

I don’t know about you guys, but I love donuts. From Vegan Confetti Mini Donuts, Vegan Coconut Maple Donuts, Gingerbread Donut Holes, and more, I love them all! However, I also love cake. Basically, I love all sweets. However, with my littles running around all over the place I don’t get the chance to actually eat them often. I swear they’re gone the minute they come out of the oven! Does anyone else have this problem? Whether my littles is taking food off my plate, the older 2 are snacking, or I just get distracted, I never seem to actually enjoy my own snacks.

Once in a while, though, a craving strikes, and I don’t want to share. Call me selfish. So, in a determined effort to satisfy my sweet tooth, I started brainstorming how I could create a recipe that my kiddos couldn’t steal right away. Obviously the answer was the microwave! The only problem was that I wanted donuts, and who’s ever heard of mug cake donuts? Well, friend, YOU have, because this recipe turned out to be amaze-balls. You can thank me later. 

For now, we’ve got a donut…er, cake…whatever, a dessert to make! 

Glazed Donut Cake Ingredients

The real challenge in creating this recipe was figuring out how to make a cake that tastes like a donut. It had to be the perfect balance of donut flavor with fluffy taste texture. I’ll admit, I was nervous, but it couldn’t have been easier! Plus, I only used a small handful of kitchen staples. To make your own, you’ll need the items below. 

  • Coconut Oil – I like coconut oil best, because it has a mild flavor and contains medium-chain triglycerides for a good source of fats. However, you could also use an equivalent amount of butter. 
  • Maple Syrup – Maple syrup adds the perfect amount of sweetness. However, honey or agave nectar can be used in its place.
  • Milk – I opted for a plant-based milk, but any you have on hand will work!
  • Vanilla Extract – Don’t forget the vanilla! It enhances the flavors of baked goods and is especially crucial for this donut cake as it does not contain a lot of super strong ingredients.
  • Flour – I used all-purpose flour. It works the best, but oat flour could work as well. Just keep in mind that the texture of the cake will be slightly different.
  • Baking Powder – Baking powder is the secret to creating a super fluffy donut cake and allows the ingredients to rise.
  • Salt – Similar to the vanilla extract, salt enhances the rest of the flavors in this recipe.
  • Powdered Sugar – Given that powdered sugar is only used to make the glaze for the “donut,” it’s optional. Is it, really, though? I think not! The glaze is the finishing touch to make this donut cake taste just like the glazed donuts we all know and love. 

How to Make the Perfect Donut Cake in the Microwave

You’re not going to believe that something so simple can taste so good! I know I’ve been calling it a mug cake, but I actually used a ramekin for this recipe. However, the whole thing comes together in just that one dish! Learn how with the steps below. 

Melt Oil. Using a small ramekin or mug if you prefer, melt the coconut oil for 30 seconds in the microwave. 

Add Ingredients. Once completely melted, add the wet ingredients, and stir until they are well combined. Next, add the remaining dry ingredients, and stir again making sure the batter is free from any lumps. 

Cook. Pop the ramekin in the microwave for 90 seconds. 

Glaze. While the cake is cooking, whisk together the ingredients for the glaze. Then, add it on top of the warm cake.

Dig in! Share your dessert with a loved one (It’s perfectly acceptable and actually encouraged if that loved one is yourself), and enjoy! 

Tools You’ll Need

It’s almost a joke how simple this recipe is to make. Honestly, I’m not trying to insult your intelligence here. My intentions were purely to make your life easier. Therefore, all you’ll need to make this mug cake recipe is 2 tools!

  • Ramekin – I recommend using a ramkein over a mug as it allows for more even cooking.
  • Whisk or Fork – To create the glaze, you’ll need to whisk together the powdered sugar and milk, but you don’t need any special tools. A fork will do just fine. Then, you can just use it to start eating! That means less dishes and faster eating. It’s a win-win in my book. 

Topping Options

Plain donuts not your jam? Personally, I love them! In my opinion, there’s something so satisfying about how delicious a simple glaze can be to the taste buds. No worries, though. I’ve got you covered with other topping options, too! Of course, you could always leave it plain, but that just feels wrong. Instead, try adding a frosting. You could even use a nut butter of choice, marshmallow fluff, jam, or chocolate syrup. 


If for whatever reason, you make this recipe and don’t get to eat it right away, it can be covered and stored in the refrigerator for up to 2-3 days. However, if you choose to reheat any leftovers, keep in mind that they will overcook easily! As a result, I recommend eating it at room temperature.

  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp plant-based milk
  • 1/4 tsp vanilla extract
  • 1/2 cup flour all purpose works best but oat works well too
  • 1/2 tsp baking powder
  • Pinch of salt


  • 2 tbsp powdered sugar
  • 1 tsp plant-based milk


  1. In a small ramekin, melt the coconut oil for about 30 seconds in your microwave.
  2. Add the wet ingredients and lightly stir.
  3. Add in the remaining dry ingredients and stir.
  4. Cook for 90 seconds in the microwave
  5. Top with glaze – whisk together powdered sugar and milk.
  6. Share with a loved one – yourself being an acceptable loved one.
