3-Minute Chickpea Cookie Dough

This edible cookie dough can be whipped up in minutes and is vegan, gluten and dairy free!

Sometimes you really just want to eat the dough and forget the whole cookie situation. Am I right or am I right? I love this recipe (if I can even call it that!) because of it’s minimal ingredients! I can say with 99% certainty that you have all the ingredients in your pantry. If you don’t, the ingredients can be easily substituted. Don’t have cashew butter? Use any nut or seed butter you have. Don’t have chickpeas? You can use white beans. Don’t have chocolate chips? Use a chopped up chocolate bar!

Plus, you could easily switch up this recipe to create a different dough:

  1. Add a tbsp of cocoa powder to make it chocolate cookie dough.
  2. Add coconut and almonds to make an almond joy variation.
  3. Replace the chocolate with white chocolate and add macadamia nuts
  4. Swirl in some peanut butter and chopped up peanut butter cups

I could go on forever. Rather than wasting your time, I rather you just make the dang dough!

Ingredients

  • 1 can Chickpeas //garbanzo beans
  • 1/4 cup Cashew Butter // I used Georgia Grinders (code: kellyk)
  • 1/4 cup Coconut Oil
  • 1 tbsp Maple Syrup alt use sugar or a sugar substitute - use more if you like things sweet!
  • 1/4 tsp Vanilla Extract
  • 1/8-1/4 tsp Salt
  • 1/4-12 cup Chocolate Chips //I use Hu Kitchen (code: healthyharmony)

Instructions

  1. Put everything into your food processor expect for the chocolate chips and blend until smooth- about 2 minutes. Once processed, stir in the chocolate and scoop the dough into an airtight container to be placed into the refrigerator until chilled.
