In all seriousness, every since my unsettled stomach decided to make it’s presence known- sweets were out of the question. Weird, I know. This girl loves all things sweets but over the last few weeks they really have’t been my thing.
I always taste my recipes for quality control and usually a nibble will do. YOU GUYS… I inhaled these. I called Cody mid chew (which I think is disgusting. Oh hello number one pet peeve of all time) and told him he should probably come home from work if he wanted to try them.
I was more than confident that I could inhale all 16 servings in one sitting.
Actually, can we talk about “serving sizes” for a sec? I hate them. I think they are stupid and pointless and just out there to make you feel bad about yourself. Would I recommend eating the whole pan in one sitting? Mmmm probably not. We would be talking major upset stomach status. BUT that doesn’t mean I would fault you for eating a few servings in a row.
The thing is… rules are really made to be broken. Who says an 8×8 pan of thick ass chocolate, peanut butter and chocolate crisps needs to be 16 servings? You want to know how I cut mine? 9 squares. NINE. I’m a straight rebel like that. And if we’re completely honest… bigger bars look better in pictures.
Anyway, life is meant to be lived. So live it by eating until your hearts content. Whether that means cutting the bars into 16 pieces and only having one or cutting them into 9 and enjoying two. Just don’t worry about the rules.
Alright- I’m going to real it in. We should probably get back to these bars of straight heaven. No… I’m not exaggerating. These bars really are that good.
They start with a mixer of dates (yum), peanut butter (heck to the yum) and coconut oil (mmmk yum). You heat the mixture up until slightly bubbly then add your vanilla.
After that, you grab your cereal. I used this kind (which was freaking perfect). You can feel free to use a cereal like this instead (super clean ingredients and uses coconut sugar instead of cane). Or even try it with a mixture! OOOOH or quinoa would be amazing!!!
Sorry guys, I get really excited about this stuff….
Anyway- you have your date mixture and you now have your cereal. Stir it up until the cereal is completely coated and pour it into a greased 8×8 baking dish. BOOM. Pop it into the fridge to set.
ORRRR you could add a thick layer of chocolate peanut butter deliciousness and claim you are queen. Or king. You know, whatever fits your fancy.
I, of course, what to be queen like in all my actions (HA!) so I added the chocolate. IT DID NOT DISAPPOINT. It has the texture of a rice crispy but the taste of a cow patty. You know, the cookie… not the poop.
It’s really important to clarify these things.
Any doodles, once you pour over the melted chocolate deliciousness…. all you have to do is wait 2 hours for the treats to set up in the fridge.

Double Chocolate Peanut Butter Cereal Bars
Say hello to your latest obsession… these chocolatey peanut butter bars will please any picky eater!
- 5-6 cups Chocolate Koala Crisp Cereal *see notes! //alt. use any brown rice cereal
- 1/2 cup Date Syrup
- 1/2 cup Peanut Butter Georgia Grinders is my fave (code: kellyk)
- 1/4 cup Coconut Oil
- 1/2 tsp Vanilla Extract
- 1/2 tsp Salt
- 2 cups Dairy-Free Chocolate Hu Kitchen is my fave! (code: healthyharmony)
Pour your cereal into a large bowl and set aside. Grease a 8×8 baking dish with coconut oil or cooking spray and set aside.
In a small sauce pan over medium low heat, stir together the date syrup, peanut butter and coconut oil. Let it get to a slow bubble before removing it from the heat and adding the vanilla extract and salt.
Mix the cereal and the date mixture together before pouring the combined ingredients into your prepared baking dish. Pop it into the fridge while you are making the chocolate mixture.
Place your chocolate in a medium microwave safe bowl and microwave for 1 minute. Stir and microwave again in 15 sec incremints until fully melted.
Pour the melted chocolate and peanut butter over the bars before putting them back into the fridge to completely set. About two hours. Slice and keep them in an air tight container in the fridge until you’re ready to eat them!
*start with 5 cups of cereal and add in the last cup if the mixture seems very wet.
