No-Bake Cookie Dough Brownie Bars

I created this recipe out of pure selfish need.

How’s that for an opening sentence? I’m clearly all about the honestly here.

Being plant-based is wonderful but sometimes your body lets you know you aren’t getting enough protein. Usually when this happens I become a bit more lethargic, slightly more moody (than I already am. Sorry babe) and my workouts don’t seem as fulfilling.

Everybody AND body is different but these are MY signals that I need to up my protein game.

Enter Cookie Dough Brownie Protein Bars!

They satisfy my need for something sweet, treat like and nutritionally fulfilling.

The best thing about these bars is that you can make the in any shape or size. Add or take away ingredients AND they are packed with protein goodness.

I can snack on one of these frozen treats and be satisfied for hours. Which is kind of like seeing a flying elephant. That shit just doesn’t happen.

  • 1 can White Beans
  • 2 tbsp Cashew Butter
  • 1 1/2 tsp Vanilla Extract
  • 1 serving Nuzest Just Natural Protein
  • 1/4 tsp Salt
  • 1 serving Nuzest Real Chocolate Protein
  • 1 tbsp Unsweetened Cocoa Powder
  • 2 tbsp Dairy-Free Mini Chocolate Chips
  • 6 tbsp Dairy-Free Milk alt use 3-4 tbsp coconut cream


  1. You can make these in whatever mold you'd like! I'd just recommend using parchment paper or cooking spray if you're using a mold. You can use a muffin tin, loaf pan or just free-form the bars!

  2. In your food processor, add the white beans, cashew butter, vanilla, Just Natural protein and salt. Process until completely smooth. You may need to scrape down the sides a few times.

  3. Stir in the mini chocolate chips or place them in the bottom of your mold of choice. I used 8 mini bread loaf molds.

  4. Now we freeze the dough! With whatever mold you use, make sure to press the dough down firmly. Once the dough is pressed down firmly, place them into the freezer.

  5. In the same food processor (you don't need to clean it), add the chocolate protein, cocoa and milk (or coconut cream)

  6. Pulse together until it forms a batter.

  7. Pull out the other dough from the freezer and press down the chocolate dough on top (divide evenly if you're not using one mold)

  8. Pop back in the freezer until you're ready to eat one!

Recipe Notes

*I have not tested these with another protein powder as Nuzest is my favorite! You can purchase Nuzest products off their site and save 15% by using 'ahealthyharmony'

** These are best kept in the freezer but before you would like one, let it sit on the counter for 10-15 minutes before enjoying!
