Sure, opt out of the all spices but cinnamon, and this recipe will still be tasty AF. But, when it’s ready in just 1 minute, you might as well go big with the flavor!

Gluten-Free, Vegan, and ready in about a minute, this Coffee Mug Cake is the easiest way to treat yourself to a delicious breakfast, healthy snack, or satisfying dessert!

  • 1/4 cup Oat Flour + 1 Heaping Tbsp
  • 1 tbsp Cashew Butter + 1/2 tsp Georgia Grinders code: kellyk
  • 2 tbsp Oat Milk
  • 2 tbsp Maple Syrup
  • 1 tbsp Ground Flax
  • 1/4 tsp Baking Soda
  • Pinch of Salt (Optional)
  • 1/8 tsp Cinnamon
  • Pinch of Cardamom + Nutmeg (should equal to 1/8th tsp)


  1. In a small bowl, stir together all the ingredients expect the tbsp of oat flour, 1/2 tsp cashew butter, coconut sugar and spices.

  2. Pour it into a greased ramekin or mug.

  3. In the dirty bowl, add the rest of the ingredients. It will be crumby but if it seems really dry, add a splash of milk.

  4. Pour the crumble over the batter and cook in the microwave for 60-70 seconds.

  5. Top with an optional glaze – I mixed Nuzest Vanilla Probiotic Protein (code: thekellykathleen) together with a little oat milk. You can use powdered sugar too
