Cinnamon Sugar Pancakes

At one point in my blogging journey I claimed I had so many pancake recipes up my sleeve that I was going to start posting them every week…

Whoops.

I probably should have never claimed that… I mean, I rather just eat the pancakes. I don’t really want to blog about them all the time. That’s a commitment and a half and I clearly have commitment issues… that being said, these pancakes are worth the wait.

I wanted to create a really simple recipe that could be remembered off the top of your head but one that was packed with flavor. It’s safe to say this recipe checks all the boxes!

I started with a base of gf oat flour (make you own by blending up oats!) and mixed it with my favorite “flour” of all time – that flour not being flour at all but Nuzest Just Natural protein!! Their protein works just like flour but it adds a protein bump to keep you feeling satisfied for longer. I’m all about that mmk?

From there is was adding bits and pieces that I knew would make major fluff factor and taste factor.

This recipe could not be any simpler because let’s be honest– who has time for complicated??

Cinnamon Sugar Pancakes

A gluten and dairy-free pancake that can be whipped up in minutes!
Prep Time 2 minutes
Cook Time 6 minutes
Course Breakfast
Servings 2 servings

Ingredients
  

  • 1 cup gluten-free oat flour
  • 1 1/2 servings Nuzest Just Natural code: ahealthyharmony
  • 1 tbsp coconut sugar *optional
  • 2 tsp baking powder
  • 1 tsp Sugar Cookies seasoning *sub cinnamon
  • 1/4 tsp salt
  • 1 whole egg + 1 egg white
  • 1 tsp vanilla extract
  • 3/4 cup dairy-free milk

Instructions
 

  • Whisk all the ingredients together in a medium sized bowl.
  • While the batter is sitting, heat a skillet over medium low heat. Once hot, spray the pan with cooking spray and scoop 1/4 cup dollops of batter onto your hot pan.
  • Cook for 2-3 minutes or until the pancakes start to set. Flip and cook for an addition 2-3 minutes.
  • Serve immediately and enjoy!
