Chocolate Pumpkin Bread

There is something about Monday’s in the Fall that just seem blissful. Maybe it’s the fact that the air smells like pumpkin spice and possibilities?? In any case, I am HERE for it.

Just like how I’m here for this Chocolate Pumpkin Bread that really needs no introduction but I’m going to give it one anyways.

I would honestly stop there because that intro is 100% facts but I really don’t think it would do the recipe justice.

This loaf not only has all the wonderful flavors that is Fall ( maple sugar, pumpkin spice & ALL the things nice- chocolate) but it also has a little of this and a little of that in it — aka immune boosting support that is reishi mushrooms. Chocolate Pumpkin Bread

A perfectly festive Fall bread that is filled with chocolate magic!

Ingredients

Wet Ingredients

  • 1 whole Egg
  • 1 cup Almond Butter
  • 3/4 cup Pumpkin Puree
  • 1/2 cup Maple Syrup
  • 2 tbsp Coconut Sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Apple Cider Vinegar

Dry Ingredients

  • 1 3/4 cup Oat Flour
  • 2 servings Further Food Chocolate Collagen Peptides with Reishi Mushrooms *see above notes
  • 1 tsp Baking Powder
  • 1/2 tsp Pumpkin Pie spice
  • 1/4 tsp Salt

Optional

  • 1/4 cup Chocolate Chips
  • 1/4 cup Pumpkin Seeds
  • pinch of Sea Salt

Instructions

  1. Preheat your oven to 350 degrees F. Grease a loaf pan with cooking spray and set aside.

  2. In a large bowl, whisk together the wet ingredients until the mixture is light and fluffy- about 2 minutes.

  3. Add in the dry ingredients, whisking together until just barely combined. *see below notes for layered version

  4. Pour the batter into you baking dish and top with optional ingredients.

  5. Bakes for 40 minutes or until the center is set. Let the loaf cool for 15 minutes before removing it and placing it on a cooling rack to finish.

Recipe Notes

If you want the layered look (like in the pictures!) simply mixed the ingredients together WITHOUT the Chocolate Collagen with Reishi Mushroom. Once the batter is mixed, put 1/2 cup of the batter into a small bowl and stir in the chocolate magic before setting it aside. With the remaining batter, pour half of it into your loaf pan. Layer on the chocolate batter and then finish it off with the remaining batter. Finish with the remaining instructions.
