Chocolate Covered Caramel Pretzel Bars

These Chocolate Covered Caramel Pretzel Bar are sort of like granola bars/sort of like a candy bar. Except these babies are a million times better!

Unlike store-bought versions, these bites are vegan, refined-sugar-free, and higher in protein for delicious make-ahead treats that will leave you actually feeling satisfied. Am I the only one that could literally eat a whole box of packaged granola bars? Don’t even get me started on chocolate covered candy bars…

To make this recipe, add maple syrup, your milk of choice, and cashew butter to a saucepan over medium heat. Whisk the ingredients until everything is melted and well combined. Then, turn off the heat, and remove the saucepan from the burner.

Add in the crushed pretzels and protein powder, whisking until completely smooth. Next, line a small container with parchment paper, and press the mixture into the container. Be sure to create an even layer on top, and place it in the fridge for 2 hours. Or, if you’re impatient like me, just pop it into the freezer for 30 minutes.

Once hardened, melt the chocolate and coconut oil together in the microwave using 30-second intervals until smooth. Using the parchment paper, remove the hardened mixture from the container, cut 8 even squares, and dip each bite in the chocolate. Return them to the freezer until set, and snack away!

Ingredients

Bites

  • 1/4 cup maple syrup
  • 2 tbsp nut milk
  • 1/4 cup + 2 tbsp cashew butter
  • 1/2 cup pretzels crushed up but not into a powder
  • 2 tbsp almond flour
  • 1 1/2 servings of Vanilla Caramel Kids Good Stuff Nuzest USA protein powder alt use a different protein

Chocolate Coating

  • 1/2 cups chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Add the first three ingredients into a small saucepan over medium heat.

  2. Whisk until everything is melted and combined.
  3. Turn off the heat and remove the saucepan from the burner.
  4. Add in the crushed pretzels and protein.
  5. Whisk until completely smooth.
  6. Line a small container (3×5) with parchment paper and press the mixture into container, making sure to create an even layer on top.
  7. Place the mixture in the fridge for at least 2 hours or in the freezer for 30 minutes until hardened.
  8. Once hardened, melt the chocolate and coconut oil together via the microwave in 30-second increments until completely smooth.
  9. Using the parchment paper, remove the mixture from its container and slice it into 9 even bars.

  10. Dip each bite in the chocolate and return it to the parchment paper.
  11. Place back in the freezer until set!
