(Big Ass) Matcha Coconut Cookie

If you do one thing in your life, make sure it’s making a cookie the size of your face. I mean, I feel like this is pretty obvious but if you are questioning my statement, let me inform you of why you should no longer question me.

Making a cookie the size of your face is:
– DELCIOUS
– FUN TO EAT
– SAVES A WHOLE LOT OF TIME

That last point is my favorite (alright, the first two are 😉). Who wants to take the time to form a bunch of cookies when you can just plop the batter on a cookie tray and bake?

I am ALL about time saving hacks – especially when it comes to enjoying great food.

Another time saving hack that I use quite often in baking (and cooking in general) is using pre-made mixes!! I mean, why wouldn’t we use things that make our lives easier. Especially if those things mean making delicious food in a pinch so that we can spend more time with loved ones, checking off other items on our to-do list or more importantly – spending some time on OURSELVES.

You deserve a little pampering – you know you do! Taking little cheats in the kitchen will allow you to do just that.

So, with that said, I used a grain-free cereal mix from a company called Seven Sunday’s. I LOVE their stuff but if you don’t have it and don’t want to purchase it (currently 😋) you can just make your own – and in only a couple seconds too!

Substitutions for this cookie could be whatever your heart pleases but I would recommend the following:

2 tbsp coconut
1 tbsp pistachios
1 tbsp slivered almonds
1 tbsp sunflower seeds
1 tbsp raisons or a chopped date (use scissors!)

+ whatever else you want! To make the cookie (pictured below) I used 1/3 of the Seven Sunday’s Lucky Day Mix and then probably an additional 2 tbsp to make it look pretty. Feel free to lower or up the quantity as you see fit!

Ingredients

  • 1 whole egg
  • 2 tbsp cashew butter
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1 1/4 cup almond flour
  • 1 scoop vanilla collagen
  • 1/3 cup Seven Sunday's Lucky Day Mix + extra for topping *see above for all the substitutions!

Instructions

  1. Preheat your oven to 350 and line with parchment paper or a silicone baking mat. In a medium bowl, stir together all the ingredients. Form one large cookie and bake for 17-18 minutes.
