Life is just good when you have this bar in hand. I’m clearly tooting my own horn. I also have no regrets.

Have you every tried to eat apple pie on-the-go? Of course not! You aren’t that desperate. Let me tell you from personal experience  not personal experience that eating apple pie any other place than in a chair is just bad business.

I’m happy to report that these bars totally DON’T solve that problem. Whoops. I’m sorry but who wouldn’t want a bar that is fall apart moist with chunks of apple, toasted pecan and drizzled with some extra pecan butter? If you don’t want that, find a portal bar that resembles cardboard because this one AIN’T for you mmk?

All jokes aside, this bar’s flavor is just like an apple pie. In my personal opinion, it’s just better. Not because I think I’m the holy grail of apple pie deliciousness but because the apple-pie crust ratio is just never enough. Who likes that much apple? These bars are the perfect ratio of crust to apple saucy goodness. Trust me.

Ingredients
  

  • 2 tbsp Coconut Oil
  • 1/2 cup Pecan Butter * I used Georgia Grinders
  • 1/4 cup Maple Syrup
  • 1/4 cup Unsweetened Apple Sauce
  • 1 tsp Vanilla Extract
  • 1/2 cup Oat Flour *I made my own by blending 1/2 cup oats in my blender
  • 1/4 cup Gluten-Free Rolled Oats
  • 3 tbsp Coconut Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Pumpkin Spice
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1/2 cup Honeycrisp Apple peeled and finely diced
  • 1/4 cup Pecans chopped

Instructions
 

  • Preheat your oven to 350 degrees F. Grease a 9x5 loaf pan and set aside.
  • In a large bowl, whisk together the wet ingredients (coconut oil-vanilla ext).
  • Add the dry ingredients (except apples&pecans) to the wet and fold them in until just combined. 
  • Spoon 3/4 of the batter into your loaf pan, add the apples and pecans then top with the rest of the dough. Press down firmly with either your hands or spatula so that the bars will stick together.
  • Bake for 20-22 minutes. Let the bars cool completely in the pan before cutting them into 12 bars and enjoy!
