These Strawberry Cashew Protein Bites are made with just 4 ingredients for the easiest no-bake recipe ever. High protein, allergy-friendly, and full of healthy ingredients, they’re perfect for a nutritious breakfast, quick snack, or guilt-free dessert!

You guys, I know I’ve said it before, but I’m not kidding this time. This recipe for Strawberry Cashew Protein Bites is the easiest recipe that has ever come into existence. In fact, it’s so quick I made a batch while writing this post. Okay, not really, but I totally could if I wanted to! Honestly, these bites are a dream come true for a busy mama like myself. 

Not only are they only made with 4 ingredients, they’re a no-bake recipe and made with ready to-go items. That means that I don’t have to heat up the house with the oven, pull out the food processor or blender, or even dirty a spoon. Know what that equals? A one-bowl recipe with minimal clean up. Yes. Please. Similar to these No-Bake Chocolate Oat Bars and my Healthy Cookie Dough Bars, these protein bites are super kid-friendly and perfect any time of day. I can’t even tell you how many batches I’ve made. It’s a LOT. I can’t help it. I mean, they’re super cheap, and my whole family agrees they’re great. 

Honestly, I could gush about these protein bites all day long, but I’ll spare you the nitty gritty details of this love affair. After all, I know you’re just here for the recipe. Keep reading to learn more!

Ingredients Needed for Vegan Strawberry Cashew Protein Bites

Get out a pen and paper, because I don’t think you’re ready for this list. There’s absolutely no way you’ll remember it all. In fact, you’ll probably need to make several grocery store runs for items you’ve forgotten. JOKES. All you need for these high protein energy bites is a jar of cashew butter, a tub of vanilla protein, strawberry jam, and freeze-dried strawberries. 

Admittedly, I have only tested this recipe with the ingredients I have on hand. I realize I might be a bit biased, but I think they’re the secret to the perfect protein bites. However, you could technically use whatever versions you have on hand. I promise I won’t be mad. Personally, my favorite cashew butter is from Georgia Grinder’s. Feel free to use code: kellyk to save a few bucks! Similarly, I use Nuzest for all my protein needs (code: thekellykathleen). For these vegan protein bites, I opted for the vanilla flavor! As far as the fruit goes, opt for either homemade or store bought jam and any freeze-dried strawberries you have on hand. 

Add ins & alternatives

For the sake of simplicity, I kept the ingredient list to a minimum for these protein bites. However, feel free to play with alternatives and add-ins! For example, if you have an allergy-concerns or intolerances, the cashew butter can be exchanged for any other nut or seed butter such as peanut butter, almond butter, or sunflower seed butter. Similarly, any protein powder you have on hand will do. I prefer Nuzest as it is an easily digested plant protein, but whey, and isolate proteins work just fine, too – I THINK. I have yet to test it because as you know, my love for Nuzest runs deep.

Also, don’t be afraid to have a little fun in the kitchen and make these vegan protein bites your own!  For example, you could swap out the strawberries with Blueberry Jam and freeze-dried blueberries. Or, try adding in any other fruit you prefer. I recommend using craisins or raisins. You could even add-in items such as nuts, seeds, chocolate chips, oats, and more! Just make sure not to add too much of any one ingredient. Otherwise, the bites will not stick together. 

In addition, playing with different spices and extracts is an easy way to create incredible flavors! For example, add a dash of lemon juice for some citrus zest. Or, sprinkle in a dash of pumpkin pie spice, nutmeg, and allspice to recreate your favorite pie in a healthy treat. 

Or, if you want to really treat yourself, dip, dunk, or drizzle these bites into some melted chocolate or yogurt. Then, go the extra mile and sprinkle crushed nuts or cocoa powder on top. They’ll look like those expensive little truffles served during the holidays, but don’t worry. I won’t tell anyone how easy they are to make. 

How to Make Vegan Protein Bites

To make these Strawberry Cashew Protein Bites, start by combining all ingredients in a large bowl. Then, use your hands to roll approximately 12 bite-sized balls. To finish, pop them in the fridge to get happy. 

If you prefer, you could also use the “dough” to create bars instead of balls. To do so, line a small pan with parchment paper, and press the mixture into the pan, making sure to pack it tightly. Then, pop it in the fridge to solidify, and cut the dough into bars when ready to eat. 

How to Prevent Protein Balls from Crumbling

If your protein bites turn out a little dry or crumbly, don’t panic! This is totally normal. Especially, if you’re using an alternative protein powder. If this happens, just add a bit more cashew butter until the dough can be rolled into balls. Or, add a dash of honey or syrup, but not too much! Otherwise, the balls won’t hold together. 

Storage and Meal Prep

To store these protein bites, place them in an airtight container or stasher bag, and keep them in the fridge for up to 10-14 days. Or, store them in the freezer for up to 6 months.

Ingredients
  

  • 1/2 cup cashew butter I used Georgia Grinders
  • 1/2 cup vanilla protein powder I used Nuzest USA Smooth Vanilla
  • 1/4 cup strawberry jam homemade or store bought
  • 1/4 cup freeze dried strawberries

Instructions
 

  • Combine all the ingredients together in a larger bowl. Using your hands, roll 12 bites sized balls and store in your fridge until ready to eat.
