3-Ingredient Peanut Butter Cookies
Healthy quick and easy peanut butter cookies that are dairy and refined sugar free!
- 1 cup oily or smooth peanut butter that chunky stuff at the bottom of natural peanut butter jars won’t cut it (@georgiagrinders is a good option – code: kellyk)
- 1 cup granulated sugar you can use cane, coconut, @lakanto monk fruit whatevs (if not using cane or coconut, I wouldn’t use the full cup- probably just half)
- 1 cup flour – I used @bobsredmill AP flour but their 1:1 works or oat flour would be good too.
- 1/2 cup water OR milk
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking soda
Preheat your oven to 350 degrees F. In a large bowl, mix all the ingredients together – you’ll need to use some muscle so maybe skip arm day. Scoop big mounds of dough on a parchment lined baking sheet – about 7 or 8. Use a fork to make the marks… or don’t 👌🏻 Bake for 14-16 minutes. 14 minutes will give you a doughy cookie. Let them cool on the baking sheet for a few minutes before enjoying.
