Happy New Years Eve!!!! I bring you the easiest recipe ever for your fancy party tonight. You’re welcome. Or.. if you’re anything like me, you’ll be in bed by 10:30 because that is pushing your bedtime by two hours. (because realistically, that’s all you can handle.) In that case, these cake pops would be perfect just to put in your mouth. It’s kind of a win win all around.
These are made with only three ingredients and can be customized in SO many ways. I’m already planning a blueberry vanilla cake pop and a snickerdoodle cake pop as well. I’m pretty sure I’ll experiment with a peanut butter sweet potato one too.
So, how did I manage to create these beauties with only three ingredients? EASY! Store bought goodies. No, I’m not talking about products with crap ingredients. I’m talking about the stuff that I feel confident feeding my family.
For the cake part: I used a muffin! Soozy’s muffins are perfect for this and they are gluten, grain, dairy, soy and peanut free. You can find them in the freezer section- no preservatives means no shelf life!
For the binder aka frosting: I used Simple Mills vanilla frosting. You could use any frosting you’d like but Simple Mills ingredients really can’t be beat.
Lastly, the chocolate: Eating Evolved Cashew Milk bar has been my go-to lately and while they are a little more pricey, clean ingredients will always be worth the price tag to me. You can use whatever dairy-free (or not dairy-free?) chocolate you like! It can be a bar or chips, just as long as you can melt it down, you’ll be good to go!
Alright, that’s it! I topped mine with some cacao nibs but sprinkles or a crumbled up cookie would be cute on them as well! This recipe can easily be doubled, tripled or quadrupled. It can also be cut in half! Just remember that you need two tablespoons of frosting to one muffin!
